Second Sourdough Seemed Slightly Stiff

Tasty melon, pear, apple and raspberry fruit salad

The melon was super ripe and juicy, so it made for a delicious fresh fruit salad.

Bruce invited Alison and some of her friends over for lunch. We had this tasty fruit salad.

Recipe: Quinoa Tabbouleh
(with Toohey on Tuesday)

INGREDIENTS:

1 cup quinoa
2 cups water
1/2 teaspoon salt
1 lemon, juiced (i used a lime – was out of lemons…)
3/4 cup olive oil
1 cucumber, peeled, seeded and chopped
1 red onion, peeled and chopped
3/4 cup chopped fresh parsley
3/4 cup chopped fresh mint
1/2 cup feta cheese
1/2 cup Kalamata olives, pitted
salt and pepper
